Beef Plate

 

The Plate cut (also known as the short plate) is from the belly of the cow, just below the rib cut, typically a fatty meat. The short plate produces types of steak such as hanger steak and the skirt steak, the cut of choice for making fajitas, ranchera, Chinese stir-fry, churrasco and, in Cornwall, pasties and iit  is also the traditional cut of beef used for making pastrami.
