Glazed Chilly Pork Belly

Recipe Instructions:

Yield: Approx. 24 servings

Ingredients with Measurements;

1ea Pork Belly, skinned (10-14 lb. average)

Marinade, Glaze & Braising Liquid

32oz Blood Orange Capfruit Fruit Puree

4cup Brown Sugar

1cup Brown Sugar (reserve for glaze)

4Tbsp Garlic, minced

2cup Pureed Peppers (roasted, peeled, de-seeded, 10 ea. Poblano, 6 ea. Jalapeno, 4 ea. Red Bell)

1 quart Water

Recipe Directions;

Combine ingredients to make the marinade, reserve 1 quart for glaze.

Score fat side of pork belly and place in marinade overnight.

Place pork belly in roasting pan and cover with marinade. Put into 275 degree oven for approximately 4 hours. Check liquid after 3 hours and add water if necessary. Remove and let cool. Cover and place between two sheet pans wit

weight on top to “press” the belly (overnight works best).

Cut belly into 2 oz. squares and set aside at room temperature.

Heat remaining marinade and add the additional brown sugar. Reduce to thicken. Pour over pork belly sections and place back in oven at 400 degrees for 8-10 minutes. Use reduction from pan to drizzle over the final plated product. Garnish with your favorite hard candy!
